  1. Your tamales look beautiful. I make them every year for Christmas. Since moving to Australia I have had to substitute banana leaves for corn husks (they don’t sell them here and you can’t bring them in). Anyways, I have yet to master making them look pretty. We do the traditional red chile with pork, but I also like to fill half of them with a slice of asadero cheese and a strip of pickled jalapeño–a type of tamale I learned to make in Mexico.

  2. YUM! The only challenge with tamales is that the recipes make so many. I don’t know about you but I can only eat so many and then I get bored! LOL

    The next time I get the ‘cravings’ I’m going to make these.

  3. Maya your tamales sound wonderful. I thought about using banana leaves because I actually had some. I’ve only cooked with the leaves once. Do they change the flavor?

    Jerry – yes, it can get a bit boring since it is mostly the cornmeal. I think that is why I like to freeze them and not eat them for days on end. 🙂
